Mini Chocolate Raspberry Trifle
Mini desserts are a great way for guests to add a small something sweet to their meal. This trifle, having layers of Rich’s® On Top® Made with Cream in addition to raspberry filling and brewed espresso, is a cut above the average mini-dessert. Assemble these per service or make ahead – the flavor actually improves overnight!

Ingredients
1 ea 1/2 Sheet Chocolate Cake Layer (PC 03277)
2 1/4 Rich’s® On Top® cup Made with Cream (PC 09073)
1 cup Espresso, cooled (or substitute strong coffee)
1 cup Raspberry Coffee Cake Filling - Bag EEZ® (PC 03087)
12 ea Raspberry, fresh
Directions
For each individual portion, begin by piping in 1 Tbsp Rich’s® On Top® Made with Cream as the bottom layer. Add in 1 piece cake, 1 tsp espresso, 1 tsp raspberry filling, 1 Tbsp Rich’s® On Top® Made with Cream. Repeat once for a total of two layers of cake and filling, ending with a swirl of Rich’s® On Top® Made with Cream. Finish with a fresh raspberry if desired.
Quick Tip
These trifles can also be made with uniced cupcakes – simply split and layer as you would for the trifle.
