Garden Sandwich
A great vegetable sandwich is more than a collection of condiments from the burger bar. Here, fresh chives, juicy tomatoes and crisp green arugula appeal to the health conscious diner.

Ingredients
1/4 cup Cream cheese
1 Tbsp Chives, chopped
1/4 tsp Pepper, ground
2 slice Rich’s® Multi-Grain Sunflower Panini Bread (PC 00819)
3 ea Tomato slices (approximately 3-4” diameter)
1/2 cup Arugula, baby
6 rings Onion, red, thin sliced
1/2 ea Avocado, sliced
Directions
- Mix cream cheese with chives and black pepper. Set aside.
- Toast two slices of Rich’s® Multi-Grain Sunflower Panini Bread. Once toasted, spread each piece with the seasoned cream cheese.
- Layer sandwich in the following order: bread (cream cheese up), tomato slices, arugula, red onion, avocado, bread (cream cheese down).
- Serve immediately.
Quick Tip
If you don’t stock fresh chives, substitute an equal amount of finely minced onions and parsley.
