Garlicky Texas Brisket Sandwich
Brisket is usually served with a rich and heavy Bar-B-Q sauce. Lighten it up here by trading Bar-B-Q sauce for olive oil and adding fresh tomatoes, and by grilling the components for an extra layer of flavor.

Ingredients
2 slice Roasted Garlic Panini Bread (PC 04763)
1 Tbsp Olive oil
4 oz Whole Smoked Beef Brisket (PC 09160), trim the excess fat from brisket prior to slicing and serving
2 slice Mozzarella cheese (1/2 oz slices)
2 slice Beefsteak tomatoes, sliced 1/4’’ thick
Directions
- Brush both slices of bread evenly with olive oil on both sides. Grill bread to mark on both sides. Set aside.
- Place brisket on grill in so that pieces are touching and cook just long enough to create grill marks. Flip brisket using a metal spatula and top with cheese slices. Continue grilling until cheese melts.
- Remove meat and cheese from grill and place over one slice of grilled bread. Layer tomato slices over cheese and top with the other slice of bread. Serve immediately.
Quick Tip
Grilled bread can be made in batches as a prep step and held in a bread box until service. Also, fully grilled and assembled sandwiches can be held hot in a grab-and-go display – just be sure to put the tomatoes on the side, or the bread will become soggy.
