LARGE BATCH SMALL BATCH BISCUIT MIX 50 LB 5 LB WATER (COLD TAP WATER) 22 LB 8 OZ 2 LB 4 OZ MIXING INSTRUCTIONS USING PADDLE: ADD WATER TO MIXING BOWL, ADD DRY INGREDIENTS AND MIX FOR 1 MINUTE IN LOW SPEED. MAKE UP: KNEAD DOUGH 8 TO 10 TIMES, MOLD AND REST DOUGH APPROXIMATELY 5 MINUTES. ROLL OUT 3 8 TO 1 2 THICK, CUT AND PLACE ON LIGHTLY GREASED PAN OR SILICONE PAPER LINED SHEET PAN. BAKE: 425 F FOR 10 - 12 MINUTES. TOPS OF BISCUITS CAN BE EGG WASHED FOR A MORE GOLDEN BROWN COLOR (USE 1 TO 1 EGG WASH - APPLY WITH A PASTRY BRUSH). FOR A LITTLE MORE VOLUME GIVE BISCUIT DOUGH ONE THREE FOLD. FOR SHORT CAKES: LARGE BATCH SMALL BATCH BISCUIT MIX 50 LB 5 LB WATER (COLD TAP WATER) 22 LB 8 OZ 2 LB 4 OZ SUGAR 3 LB 2 OZ 5 OZ ADD SUGAR TO WATER. EVERYTHING ELSE THE SAME AS ABOVE. FOR SCONES: USE ABOVE FORMULA FOR SHORT CAKES. ADD 10 LB SOAKED RAISINS OR CURRANTS FOR LARGE BATCH AND 1 LB FOR SMALL BATCH. ROLL OUT 3/8" TO 1/2" THICK, CUT INTO TRIANGLES, PLACE ON PAN, EGG WASH AND BAKE THE SAME AS ABOVE. THESE CAN ALSO BE MADE WITH A ROUND CUTTER OR CUT INTO SQUARES. NOTE: DRAIN RAISINS WELL BEFORE PLACING INTO DOUGH.
