REMOVE FROM RETARDER, EGG WASH, AND ALLOW TO STAND AT ROOM TEMPERATUREFOR APPROXIMATELY 15 MINUTES. 4. PLACE IN PROOF BOX (85% HUMIDITY, 90 F) UNTIL ROLLS TOUCH EACH OTHER AND ALMOST FILL THE PAN. 5. BAKE ROLLS AT 400 F FOR 15 - 20 MINUTES OR UNTIL TOPS AND BOTTOMS ARE GOLDEN BROWN.
