LARGE BATCH SMALL BATCH PUMPERNICKEL 30 LB 15 LB RYE BREAD MIX WATER 2 GALLONS 1 GALLON INSTANT DRY YEAST 5 1/2 OZ 3 OZ OR *COMPRESSED YEAST 1 LB 8 OZ MIX: ADD WATER AND DRY INGREDIENTS INTO THE BOWL AND MIX 1 MINUTE IN LOW SPEED. THEN ADD INSTANT DRY YEAST, AND MIX FOR ANOTHER MINUTE IN LOW SPEED. THEN CONTINUE MIXING IN MEDIUM SPEED FOR 6 TO 8 MINUTES. * WHEN USING COMPRESSED YEAST, ADD YEAST WITH THE DRY MIX AT THE START OF MIXING. ALSO NOTE: WATER CAN BE VARIABLE DUE TO SHOP CONDITIONS. FOR: 3 SPEED MACHINE: USE SPEEDS 1 & 2. 4 SPEED MACHINE: USE SPEEDS 2 & 3 DOUGH TEMPERATURE: 84 F TO 86 F. FERMENTATION: ALLOW DOUGH TO FERMENT IN COVERED BOWL FOR 20 MINUTES. BENCH TIME: DOUGH IS THEN SCALED, ROUNDED UP, AND GIVEN 15 TO 20 MINUTES RELAXATION TIME. MAKE UP: MOLD INTO DESIRED SHAPE AND PLACE ON BUN PAN ON CORN MEAL. AVOID SHEETING DOUGH TOO THIN AT HEAD ROLLS, AVOID TOO MUCH PRESSURE AT PRESSURE BOARD. PROOF: 3/4 PROOF (50 TO 60 MINUTES) WITH JUST ENOUGH MOISTURE TO PREVENT CRUSTING. WASH WITH HEAVY EGG WASH AND CUT BEFORE BAKING. BAKE: 400 F FOR APPROXIMATELY 35 MINUTES. STORE IN A DRY PLACE.
