SHAPE CROISSANTS BY BENDING UNTIL TIPS TOUCH IN C SHAPE, BRUSH WITH EGG WASH IF DESIRED. 5. PROOF UNTIL DOUBLE IN SIZE AT 90 F (32 C) AND 70% HUMIDITY. 6. BAKING GUIDELINES: DECK OVEN: 350 F - 375 F (175 C - 190 C) FOR 15 - 20 MINUTES RACK OVEN: 375 F - 400 F (190 C - 205 C) FOR 15 - 20 MINUTES CONVECTION OVEN: 300 F - 325 F (150 C - 160 C) FOR 15 - 20 MINUTES BAKING TIME WILL VARY DEPENDING ON TYPE OF OVEN.
