Tips & handling

1. PLACE FROZEN DOUGH PIECES ON PAPER LINED SHEET PAN. 2. COVER WITH PLASTIC, PLACE IN RETARDER AND DEFROST OVERNIGHT. 3. MAKE UP: LET DOUGH THAW OUT COMPLETELY BEFORE HANDLING. ROLL DOUGH WITH A SMALL ROLLING PIN TO MAKE IT INTO A FLAT OVAL SHAPE APPROXIMATELY A LITTLE LESS THAN A HALF INCH THICK AND APPROXIMATELY 5" X 3" IN DIAMETER. PRESS DOUGH WITH A PLASTIC SCRAPER LENGTHWISE TO THE BOTTOM. DO NOT CUT THROUGH THE ROLL. (DO NOT CUT WITH A KNIFE). DUST LIGHTLY WITH FLOUR TO AVOID STICKING. PAN 9 TO A PAN (3 X 3). 4. PROOFING: LET PROOF APPROXIMATELY 35 TO 45 MINUTES OR UNTIL 3/4 MORE IN SIZE. PROOFING WILL VARY WITH THE AGE OF THE PRODUCT AND CONDITION OF THE PROOF BOX. WATCH CLOSELY THE LAST 5 TO 10 MINUTES OF PROOFING. IT IS EASY TO OVER PROOF THIS PRODUCT. 5. FINISHING: AFTER PROOF AND BEFORE BAKING DUST THE TOP OF THE ROLL WITH FLOUR. 6. BAKING: BAKE 12 TO 15 MINUTES WITH 25 SECONDS OF STEAM OPTIONAL AT 390F OR UNTIL GOLDEN BROWN.
