|2||Prepare cucumber salsa (recipe in Chef Notes)|
Combine the following spices and mix with the chicken: the juice of 1 lemon and the 2T of oil, 1 teaspoon Allspice, Ground 1 teaspoon Cinnamon, Ground; 1 teaspoon Cumin, Ground; 1/2 teaspoon Ginger, Ground; 1/2 teaspoon Turmeric, Ground; 1/4 teaspoon Black Pepper, Ground. Set the seasoned chicken aside while you make the salsa. In a bowl combine the following ingredients to make the cucumber salsa: ½ of a cucumber seeded; 2 T red onions; 1 Roma tomato seeded and diced; 1 T chopped fresh mint; Juice of 1 lemon; Salt to taste. In a hot skillet, heat the chicken mixture until the chicken is hot and slightly browned. In another pan heat the Laffa bread. Remove the chicken mixture and place on the warmed Laffa bread and the cucumber salsa and fold over and serve open face. Add a yogurt sauce if desired.
